My son ADORES this recipe, its so easy and yes – its another main meal that freezes well. You can use any type of chicken, I am not a big chicken breast fan – I always buy chicken off the bone – like thigh fillets or I cook the legs and strip the chicken. Don’t waste the bones though, make a chicken stock with the a few old veggies and freeze it for later.
