How do you get those pesky greens into your family? You make a zucchini slice!
This is so easy, and of course like most of my recipes – it freezes well. I slice it up and portion up into snap lock bags (don’t forget to date and label the bags) this is a quick and easy lunch for us on weekdays. Also great for those mornings when you realize you have run out of bread!
Although the corn is optional, I find it gives a lovely bite of texture and sweetness to the dish.
Ingredients: 3 grated zucchini (wring the water out of the grated zucchini in a clean tea towel over the sink)
2 cups of grated cheese
Salt and pepper
Dried mixed herbs (I use a good few tablespoons)
6 large eggs
2 teaspoons of mustard
1 large brown onion (diced finely)
300g of diced bacon
1 cup of chicken stuffing mix (yes stuffing mix!)
1 drained can of corn kernels
Method: Brown the onion and bacon and set aside. In a large bowl combine the rest of the ingredients making sure the egg is combined well (keep aside 1/2 cup of cheese) Add the bacon and onion and mix again. Pour into an oven proof baking dish and scatter the remaining grated cheese on top! Enjoy!
