The Ultimate Hidden Vegetable Bolognese Sauce

hidden vegetable bolognase

Bolognese is the ultimate veggie smuggler meal, and this hidden vegetable bolognese sauce is a winner for the whole family.

Even expert veggie finders will struggle to unearth some well hidden veggies that have been blended to oblivion! If your kids are on the fussy side then grating the vegetables as suggested in the recipe may not be enough, chuck them in a food processor and blend until they are a smooth mush.

Bolognese also freezes really well so we keep a stash on hand for last minute dinner emergencies or if I’m cooking something I know the kids won’t touch.

Hidden Vegetable Bolognese Sauce Recipe

  • 500g lean mince
  • 2 small zucchini, grated
  • 2 carrots, grated
  • 1 onion, finely diced
  • 1 tin crushed tomatos
  • 1/2 cup water
  • 1 tbs dried oregano
  • 1/4 cup tomato paste
  • 1 tbs olive oil

  1. Add olive oil, onion and oregano to a frypan on medium heat
  2. Cook for 3-5 minutes until clear
  3. Add mince and cook for 10-15 minutes, stirring constantly, until browned
  4. Add tomato paste and mix well
  5. Add remaining ingredients and cook covered for 15-20 minutes on low-medium. The sauce should simmer but not be boiling.
  6. Serve with rice or pasta.

If your kids are a bit gamer when it comes to hidden veggies you can add in tinned corn and frozen peas to up the vegetable content. Tinned three bean mix also adds a great flavour and bulks it out even further.
