These sticky date pudding muffins are really good on their own for lunch box treats or heat up warm for desert with lashings of cream and caramel yum!
Ingredients
2 1/2 cups self-raising flour
1 cup chopped pitted dates seeds removed
1/4 cup brown sugar
1 teaspoon ground cinnamon
1 cup milk
100 grams melted butter
1 Egg
1/4 cup golden syrup
Method
Preheat oven to 180 degrees.
This is really easy, basically add all ingredients to a Thermomix or food processor and combine until all lumps are removed.
Line a muffin tray with 12 cases.
Spoon mixture half way up the case and pop in the oven for 20 – 25 minutes until they have risen and bounce back in the middle on touch.
Eat warm or cool, they also freeze well!
