Who doesn’t love a good cheesecake slice, and let me tell you this passionfruit slice, is the perfect mix or sweet and tart with just enough crunch in the base to make you go back for a second piece!
100 grams butter melted
250 grams butter snap cookies
1 tablespoon gelatine powder
2 tablespoons hot water
1 small tin of passionfruit
500 grams Cream cheese
250 mills thickened cream
1/2 cup caster sugar
Place the butter snap cookies in a food processor and blitz until a fine crumb.
Add the butter and mix again.
Press the mixture into a 22cm slice tray and pop in the fridge for 20 minutes.
Start on the filling by adding the hot water and gelatine together, and set aside.
In a mixing bowl add the cream cheese sugar and start beating until well combined.
Add the cream and mix until thickens slightly.
add the passionfruit and mix through well.
Now add in the gelatine and combine well.
Pour the mixture over the biscuit base then pop back in the fridge for 3 – 4 hours to set.
