Nothing beats Home Style Chicken Nuggets. They’re so tasty and are easy to make. Get the kids to give you a hand making them. They’re bite sized and full of flavour you won’t be able to stop at just a couple!
IF they’re any left over, they’re great for lunches the next day and make great parmagana cups.
2 Chicken Breasts
Milk – enough to cover the chicken (to let it soak) This step is optional
1 Cup of wholemeal bread crumbs, use fresh if you have them
2 Tablespoons of finely chopped fresh parsley
1 teaspoon of dried Italian herbs
½ teaspoon of onion powder
½ cup of fresh parmesan cheese
1 Cup of plain Flour
2 Eggs, beaten with ½ cup of milk
Olive Oil for frying
Firstly if you want a nice moist chicken, soak the breasts in milk for at least 30 mins. Use enough to cover the chicken, cover and place in the fridge.
Prepare the crumb by combining in a bowl; bread crumbs, parsley, Italian herbs, onion powder, parmesan cheeses. Give it a stir and set aside in the fridge.
Once the chicken has soaked for 30 mins, leave a little milk for the egg and chop the chicken into bit sized pieces. Coat in the flour, egg then breadcrumbs.
Heat the oil until it is hot and fry nuggets until golden and turn. Place on paper towel to absorb excess oil.
Alternatively, you can cook at 180 degrees in the oven. Ensure you coat them with some olive oil spray and turn after 10 mins. They should take approximately 20-25mins.
