I love pumpkin and this is a delicious way to take it to the next level. We eat this as a side and then stir the left over’s through pasta the following night, so good!
500 grams Pumpkin, peel and steamed briefly. You dont want the pumpkin to go to soft just enough so you can smash it slightly.
200 grams grated parmesan cheese, you can use whatever cheese you choose.
150 grams sliced Swiss cheese
Handful diced chives
1 teaspoon of Vegetta
Pinch of salt and pepper
Dash Olive oil
Preheat oven to 180 degrees.
Grease the bottom of a baking tray with olive oil.
Add the pumpkin to the tray with salt and pepper and Vegetta.
Place in the oven for 15 minutes.
Take out of the oven and spread the cheese over the top.
Pop back in the oven for 5 – 10 minutes until cheese starts to melt.
Take out of the oven and sprinkle with extra cheese and chives.
Serve as a side or eat on its own yum!
Have left over’s? Add it to a food processor with 100 mills of cream for the yummiest pumpkin soup!
