My husband loves tuna, he eats it straight from the can with a fork. I can’t watch him! He’s always begging me to make more tuna dishes, he especially loves tuna mornay. I wanted something different for lunches so I experimented a little bit and came up with these cheesy tuna and potato balls. They are so good! Even for me who is not a big tuna lover. These babies just give you a big burst of garlicky cheesy tunery (new word I made up!) potato goodness!
425g of canned tuna in spring water
2 cups of grated cheddar cheese
1 finely diced onion (browned in a pan)
500g of white potatoes (boiled and mashed)
2 teaspoons of minced garlic
1 teaspoon of dried mixed herbs
1 cup of break crumbs
1/2 teaspoon of salt
In a large bowl, add 1 cracked egg, the drained tuna, finely diced browned onion, cheese and garlic. Mix until all the ingredients are combined.
In 2 bowls, pour the bread crumbs in one and the remaining 2 eggs (whisked) in the other.
Using your hands, roll the potato and tuna mixture into the size of golf ball, wash in the whisked egg and roll in the bread crumbs. Do this until the all of the mixture is in balls. This should make about 10-12 (depending on the size)
Shallow fry in a fry pan until golden brown and set aside on a paper towel to drain.
These are best served with some aioli or sweet chili sauce.
