Hands up if you love bacon and eggs on a lazy weekend morning?…. Umm everyone right! Now hands up if you love the idea of cooking bacon and eggs for a LOT of people all at once?… Probably no-one. The thought of making bacon and eggs for a dozen people is enough to make even the hardiest of cooks squeal in horror

But fear not! If you’ve just found out that you’re catering breakfast for a whole heap of people, you don’t need to worry! We have you totally covered with our 2 Ingredient Breakfast Cups. They’re quick, they’re easy and best of all, they’re totally delicious! So to make the breakfast cups, you need to lightly grease a standard 12 hole muffin tin. Then grab some shaved or thinly sliced ham and press it into the bottom and sides of each muffin hole. The ham I used was shaved very thinly, so I double layered my ham so that no egg could escape.

From there, it’s simply a matter or cracking an egg into each muffin hole and then baking in an oven preheated to 200 degrees celsius for 15 minutes or until the eggs are cooked to your liking. Take the tray out of the oven and carefully remove the breakfast cups. If they’re a little bit stuck, run a butter knife gently around the edge to loosen. Serve immediately!

Not only is this a great way to feed a large number of people for breakfast, it’s also perfect if you’re looking for low-carb breakfast alternatives. For a yummy variation, why not try adding a little grated cheese and chopped spring onions over the top before cooking.

If you’re feeding a larger number of people, simply increase the amount of muffin tins you use – easy peasy!

Serves 12

 

Ingredients:

12 slices shaved or thinly sliced ham (you may need a little more depending on how large the shaved slices are)

12 eggs

 

Method:

  1. Preheat oven to 200 degrees celcius.
  2. Lightly grease a standard 12 hole muffin tin.
  3. Press 1 slice of shaved ham onto the bottom and sides of each muffin hole.
  4. Place into the oven for 15 minutes or until the eggs are cooked to your liking.
  5. Carefully remove the breakfast cups and serve.
