Pre-heat oven to 180c. Spray & line with baking paper a round cake tin. Put the diced dates & apricots in a saucepan and add the apple or orange juice. Bring to the boil then simmer for 15 mins, add the brown sugar, stir to dissolve then cool mixture for 10 mins.
In a large bowl, beat the eggs & butter together, add sifted flour & milk. Add date & apricot mix & any extra juices that are in the saucepan. Mix together. Depending on the moisture of the fruit you may need to add a little more milk or flour to get an even mix. Add diced apple & stir through. Pour cake into tin & bake for 25mins or until a skewer comes out clean.
Leave to cool for 10 minutes then turn on to a wire rack, remove the paper and set the right way up. Leave to cool. Dust with icing sugar, eat slices, spread with butter, for afternoon tea or morning coffee.
