6 Ingredients Lemon Meringue Slice!

This recipe was sent into us by one of our lovely readers Nadine. Nadine is a busy mum of 3 who loves to cook.

As soon as we saw this recipe we new we had to give it a go, it really is easy and so yummy!

 

 

THE BASE INGREDIENTS:

1/2 cup butter

1/2 cup sugar

1 egg 2 egg yolks (keep the whites for the meringue)

1/2 cup self raising flour

THE BASE METHOD:

Cream butter & sugar.

Beat egg & egg yolks then add to butter mix.

Mix in flour.

Bake in greased slice tin in 180 oven for 30mins.

 

LEMON FILLING INGREDIENTS:

1 can condensed milk

Lemon juice of 2 lemons Lemon rind (to own liking)

1/2 tablespoon flour (plain self raising and corn flour all work)

LEMON FILLING METHOD:

Beat until creamy then pour over cooled base.

 

MERINGUE:

2 egg whites (use left over whites from the base)

1/2 cup sugar

1/2 teaspoon lemon juice

MERINGUE METHOD:

Beat egg whites until peaks form.

Add sugar & lemon juice

Continue to beat until shiny.

Spread over filling and bake at 180 oven for 10 mins.

Once cooled cut into slices and enjoy!
